UPI Catering Industry Management Students Successfully Hold Pop-Up Fine Dining “GALAKSARA: Galactic Taste of Nusantara” as Realization of Project-Based Learning

Bandung, December 9, 2025 – Students of the Catering Industry Management (MIK) Study Program, Universitas Pendidikan Indonesia (UPI), class of 2022, have successfully organized a Pop-Up Fine Dining event titled “GALAKSARA: Galactic Taste of Nusantara”. This event was part of the Project-Based Learning (PBL) for the Food and Beverage Service Management course, supervised by Lecturer Rattikah Fitrianty, S.Par., MM.Par and Practitioner Lecturer Rachmat Astiana, S.Par., MM.Par.

Held at Renemane, Jl. Jawa No. 54 on Tuesday, December 9, 2025, the event was attended by several distinguished guests, including Vice Dean for Student Affairs and Partnerships of FPIPS UPI, Dr. Bagja WaluyaHead of the MIK Study Program Dr. Woro Priatini, S.Pd., M.Si., along with several lecturers and industry practitioners, such as Prof. Dr. Ir. H. Roni Kastaman, MSIE (UNPAD)Dr. Dewi Turgarini, S.S., MM.Par.Purna Hindayani, S.PL., MT.Candra Sari Triyana, S.St.Par., MM., and Dolores Silvia, S.Pd., M.M.

GALAKSARA drew inspiration from the harmony of the four natural elements—fire, water, air, and earth—combined with the richness of Nusantara (Indonesian Archipelago) cuisine and zodiac characteristics. Through this concept, students not only applied F&B management theory but also honed their creativity, teamwork, and operational skills in organizing an elegant and meaningful fine dining experience.

The Menu Series Presented:

  1. Appetizer: “Rujak Bayu Samira” – Fresh tropical fruits with a fruit sauce flavored with sweet and aromatic palm sugar, presenting a combination of fresh and delightful flavors.
  2. Soup: “Jala Aghni” – A savory broth meeting soft fish dumplings, flavorful mushrooms, and fried vermicelli, creating a light taste that delivers gentle, comforting warmth.
  3. Main Course: “Sandu Samadi” – Chicken marinated with Balinese spices and basil leaves, combined with the freshness of sambal matah and the savory crunch of long beans, delivering an authentic and distinctive Balinese sensation.
  4. Dessert: “Madha Bumi Rasala” – A sweet, light, and rich flavor from pandan banana balls served with red banana syrup, silky coconut rice custard, and peanut crumble.

This event also served as tangible proof of experiential learning, where students were directly involved in planning, production, service, and evaluation. Beyond being a final assessment requirement, this activity aimed to equip students with real-world experience in managing an innovative and sustainable temporary culinary business (pop-up dining).

"We are incredibly proud of the dedication and creativity of the MIK class of 2022 students. Through GALAKSARA, they have demonstrated not only technical skills but also an entrepreneurial spirit and appreciation for Indonesian culinary culture," said Ms. Rattikah Fitriyanti as the supervising lecturer.

With a strong theme and mature execution, GALAKSARA succeeded in creating an unforgettable dining experience, while also serving as a valuable portfolio for MIK UPI students before entering the professional world.
